I don't know about you, but I feel like each year it takes me a little longer to recover from the holidays. Even though it is halfway through January already, there seems to be a considerable portion of my brain that is still grasping for a few more days of rest and relaxation.

Fortunately for me, not only was I given the opportunity to feed my family a tasty pizza, but Boboli's Chef Mark (a Brooklyn-born chef that has worked in a 5-star restaurant) helped point me towards Boboli's A Taste of Italy recipe when I told him pizza toppings that I typically enjoy. All that was left to do was put this custom pizza together and give it a try!
A Taste of Italy
12" Boboli Original Pizza Crust
2 tbsp olive oil
1 lb fresh Mozzarella cheese, sliced
2 Roma tomatoes, diced
1 tsp salt
Fresh basil, sliced
Pinch of Italian seasoning
Preheat oven to 450°. Brush pizza crust with olive oil. Drain fresh Mozzarella and thinly slice. Place cheese slices on the crust. Spread diced tomatoes over entire crust. Sprinkle salt and Italian seasoning over all ingredients. Snip fresh basil leaves to cover the other ingredients. Bake for 8 - 10 minutes or until golden brown. Let cool and enjoy!
I love the taste of basil, so I left my pieces nice and large as I put together this quick and easy recipe.
I ended up taking my pizza out of the oven at the 8-minute mark because the cheese was melting and dripping off (mental note: next time don't place the cheese so close to the edges), but I think it could have used to have stayed in a little longer to fully brown.
But even with the early removal, the results still looked delicious!
Mmmm! We sliced this up and the sound of contented munching was all that was heard.
The combination of the toppings with the tasty Boboli crust was a perfect match and we weren't even done with the meal before Big Sister E was asking when we were going to have this pizza again. I'd call that a hit!

Boboli is my go-to pizza crust. Their whole wheat is yummy. Kids love their thin crust. That pizza looks delish!
We love their crust. I like getting the little individual ones too for Hayden.
